It has been a little over a year since Ali and Jonny Aspden took over Udny Green Post Office and transformed it into their dream cafe.
Ali and Jonny, both 32, bought the premises in May last year and work began that summer to change the former Mosshead General Store into a cafe.
The couple have continued to run the Post Office and it now sits alongside their cafe, The Coffee Apothecary, which has been open since December last year.
Ali said: “They both have their own challenges really. But we are really pleased with how it is going.
“And people are happy about what we are doing.”
Both Ali and Jonny have worked hard to ensure their cafe is something that reflects what they would want while also serving as a hub for the community.
Nearby Wood RecyclAbility, who provide training for adults with learning disabilities, have provided wood for Ali and Jonny to hand build their own furniture for the cafe.
Most recently, they have completed garden furniture for outdoor seating.
The couple are always thinking of new ways in which they can expand and improve their business.
“We always knew that we wanted to do more than just cakes and coffees.
“We put wine on the menu last month and we offer breakfasts which are quite popular .
“Now we are thinking of moving to opening in the evenings as well,” said Ali.
Both Ali and Jonny are passionate about coffee and strive to ethically source the ingredients for their menu.
Ali said: “We use locally sourced vegetables and everything is always fresh.”
The meat used in their dishes is also sourced locally and Ali ensures that the animals are treated ethically.
Ali said: “We spend hours chatting and making sure that the coffee is ethically sourced.
“We think what we would really like and we try and do it.”
